Diced pointed gourd (Trichosanthes dioica) and potatoes are cooked in coconut milk, and sauteed bay leaves and spices (turmeric powder, ginger, cumin, black cumin, and chili pepper). To prepare this dish, shallow-fried diced vegetables (pointed gourd alone or with potatoes) are mixed with sauteed cumin, black cumin, bay leaves, and chili pepper in a pan to which spiced coconut milk—that is ground with cumin seeds, ginger, and chili pepper—is poured. The mixture is heated about 10 minutes in simmering heat, and served hot by garnishing cilantro.
